First insight: I need to invest in a cookbook.

Carrot sandwiches, though oddly tasty, don’t make for a nutritious lunch.

    One I can recommend is the Inspired Vegetarian. Loooove the recipes in it. Authors are Pickford & Filgate.

    Also, feel free to come over anytime & peruse our cookbook collection. We have a few vegetarian cookbooks and many cookbooks with great vegetarian recipes in it.

    Carrot sandwiches? Really? I eat radish sandwiches (thinly sliced radishes on toasted, buttered bread with fleur de sel or any other good salt). Mmmmm. Sounds weird but they taste really good.

    We’ve also got an amazing recipe for coriander sandwiches from a friend’s Mum. Again, sounds odd, but really good. If you like coriander (cilantro), let me know. I’ll send it along.

    Agreed with Andre. Madhur Jaffrey has a good vegetarian cookbook, and the Moosewood collection has been a veggie standard for ages. Good luck on your quest, I won’t be joining you, I’ll likely be over at Michel’s “pigging out” on his homemade jamón. ;P
